What can you do with those overly ripe bananas that you don't feel like eating? Instead of throwing them away, freeze them for later use in this recipe.

This fail-proof banana bread recipe is a top favorite of mine. I incorporated approximately

6 medium-sized frozen bananas into this recipe. Simply allow them to thaw, peel, and drain excess liquid by placing them on a sieve.

​

This banana bread is moist and flavourful, packed with fresh bananas and brazil nuts. It's not overly sweet and simple to prepare. The addition of nuts adds a delightful crunch to every bite. It makes for a perfect snack for kids or a lovely treat to enjoy with a cup of tea in the afternoon.​​

Ingredients:

Wet ingredients

  • 3/4 cup extra virgin olive oil

  • 3/4 cup brown sugar cane

  • ​1 1/2 cups mashed ripe bananas

  • 2 large eggs

  • 2 teaspoons vanilla extract

​

Dry ingredients

  • 2 cups of all purpose flour (spoon and level)

  • 1 teaspoon ground cinnamon (optional)

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon fleur de sel

  • 1/2 cup chopped brazil nuts, leaving a small portion out and setting it aside for toppings.

Directions:

  1. Preheat oven to 175°C (convection setting).

  2. Line a standard (9x5inch) loaf pan with baking paper.

  3. Mix together the wet ingredients: extra virgin olive oil, brown sugar cane, mashed bananas, eggs and vanilla extract using a whisk or spatula.

  4. Sift all the dry ingredients together and gently stir them into the wet ingredients.

  5. Add the nuts and mix.

  6. Scrape the batter into the pan and sprinkle chopped nuts on top of the batter (as many as you want).

  7. Bake for 60-65minutes. Test the cake's doneness by inserting a cake tester or a toothpick into the center of the cake. If the cake tester comes out clean (not wet), it indicates that the cake has baked through evenly and is ready to be removed from the oven.

  8. Let the cake cool in the pan for 15 minutes. Remove it and let it sit on a cooling rack before cutting.
