BEHIND THE SCENES
From my kitchen to your home
MAKING THE DOUGH
Once I receive your order, I will start creating a design sketch on my iPad. If time permits, I will share the design with you before baking. This is one of the reasons why I request orders to be placed at least 2 weeks in advance. I use only the very best ingredients for my cookie recipe.
All of my cookies are palm oil-free but not gluten-free, although some ingredients are imported from the US & EU, I make an effort to source locally whenever possible. I rolled my cookies into a 8mm thickness and that gives it the perfect balance of texture between soft and chewy. After rolling and preparing the dough, I cut it into various shapes. If a specific cookie cutter shape is unavailable, I will hand-cut the dough accordingly. Once shaped, the cookies are ready to be baked in the oven.
PREPARING ROYAL ICING
Good-quality sugar cookies come in pairs. While I am known for my excellent sugar cookie recipe, I also prioritise the quality of my royal icing. There are various methods to make royal icing, but my preferred technique is with meringue powder. This eliminates the need to separate egg whites from yolks and reduces the risk of food-borne illnesses that can come from raw egg whites. The egg whites in the meringue powder are usually pasteurised to remove any traces of salmonella and other harmful bacteria. Food safety and hygiene are my utmost concerns.
Achieving the ideal consistency for royal icing can be challenging, with water being a crucial factor. In my recipe, I use Evian water and adjust the amount as needed. The beauty of royal icing is that you can control the consistency by adding more water or confectioners’ sugar to achieve the desired outcome. It's a fantastic process.
DECORATING THE COOKIES
After baking to perfection, my delicate fingers spring into action, sparking the magic! Each cookie undergoes a distinct design process, entirely crafted by hand. It typically begins with mixing colours and individually bagging them (a part I find less enjoyable, often taking up to 1-1.5 hours). Next comes the outlining, followed by carefully flooding the cookies and adding intricate details for that perfect finish. My most requested cookie designs are cartoon characters. As you can see, creating these designs entails several steps, and I strive for authenticity in their appearance. And remember, the golden rule: Good things take time, Great things take a little longer!
AIRBRUSHING TECHNIQUE
Airbrushing is a technique used in decorating sugar cookies. It involves using an airbrush machine, which sprays edible liquid food colouring onto the surface of the cookie. This allows for precise and intricate designs to be created with a smooth and professional finish. This technique is used to add gradients, shading, patterns, 3D effect to the cookies, giving them a unique and polished look. It is a popular method cookie artists use to achieve stunning and creative designs.

GOLD DUST HAND PAINTING TECHNIQUE
A decorative technique where it creates a shimmering and luxurious effect, adding a touch of elegance and sophistication to your cookies, makes it a popular choice to elevate the visual appeal for special occasions, such as weddings, bridal shower, or upscale events.
It is a mixture of edible gold dust and a liquid medium such as clear alcohol or extract, is used to hand-paint intricate designs on the surface of cookies. The use of alcohol or extract helps in dissolving the gold dust particles for hand-painting techniques on royal icing by acting as a solvent to break down the gold dust into a smooth and liquid form, allowing for a uniform application onto the surface of the royal icing. The alcohol or extract evaporates quickly after application, leaving behind a shimmering and metallic finish on the decorated cookies.
